The restaurant will occupy the space at Harrah’s formerly occupied by Toby Keith’s I Love This Bar & Grill, according to coverage by VitalVegas.com. The restaurant’s name is taken from the life stories of cofounders Brandon Landry and Jack Warner, who joined the Louisiana State University basketball team as “walk-ons” (unrecruited and unsigned athletes).

Walk-On’s specializes in Cajun cuisine, and its menu varies from location to location. Menus have featured seafood dishes like Voodoo Shrimp and Grits, Mardi Gras Mahi, and Fried Catfish; “Bistreaux Specialties” like Pastalaya and Pasta Alfredeaux; a selection of sandwiches and po boys; and soups like Duck and Andouille Gumbo.

Other offerings have included signature salads, tacos and wraps, and sides like corn grits and loaded mashed potatoes. Guests can pair their choice of entrée with signature cocktails, including the High West Smash (High West American Prairie bourbon, peach purée, lemon and orange juices, mint, and muddled strawberries, with a sugared rim) and Death Valley (Svedka vodka, Don Q Cristal rum, orange juice, and pineapple juice.)

Customers can then finish off their meal with desserts like the Warm Cookie Sunday, Krispy Kreme bread pudding, and beignets.

What Now Las Vegas reached out to Brandon Landry by phone last week. Landry was unavailable for comment.
