Smash Hit Daeho Kalbijjim and Beef Soup Headed to Las Vegas

Daeho’s beef short ribs are a runaway success on the West Coast, and the brand is looking to expand in a big way

When Daeho Kalbijjim and Beef Soup first opened in San Francisco’s Japantown with kalbijjim (beef short ribs) and beef soup, the plan was for the restaurant to develop into a high-end Korean barbecue spot. This plan was interrupted, however, by the runaway success of its kalbijjim recipe.

“The sign still says ‘Korean BBQ,’” Chief Operating Officer Tony Chong told What Now Las Vegas in a phone call on Monday. “But that went out the door when we started having lines around the corner.”

Success led to three more locations (another in San Francisco, plus one more apiece in Milpitas and San Mateo), and Chong says the brand is now looking to expand to states like Texas, Hawaii, and Arizona. As part of this growth push, Las Vegas will be home to Nevada’s first Daeho, with a new location expected to open in suite 5 at 2580 S Decatur Blvd.

The menu at the Decatur Blvd Daeho will feature the brand’s now-famous kalbijjim braised short ribs and beef soups. Like several hot-weather Daeho locations, the Las Vegas outpost will offer naengmyeon (cold noodles) and other chilled dishes to help guests beat the heat. The location’s larger kitchen size will also allow the restaurant to serve up more appetizer choices, Chong said, in addition to its house-made kimchi and other banchan (side dishes).

Daeho Las Vegas is currently in the permitting process and is working toward an opening before the end of the year. Stay tuned for updates as this exciting Korean cuisine makes its way to the Las Vegas Valley!
