Union Biscuit to Serve Up Breakfast and Brunch in Spring Valley

With fresh-made biscuits front and center, Union Biscuit will offer classic and adventurous takes on breakfast

Spring Valley will soon be home to a brand new biscuit-focused breakfast concept. Opening near the intersection of West Sunset Road and Brent Thurman Way, Union Biscuit will serve biscuit-forward breakfast and brunch, offering both classic American breakfasts and other adventurous approaches to the most important meal of the day.

“We’re sort of repackaging breakfast,” owner Kyung Lee told What Now on Wednesday. “There will still be eggs, bacon, hash browns, and of course biscuit sandwiches. But we’ll introduce some different kinds of breakfast as well.”

These other takes may come to include a breakfast ramen or breakfast biscuits featuring ingredients from Korean cuisine, like kimchi, fried chicken, and more. A beer and wine component can be expected in the future, although for now Union Biscuit will focus on its food menu, which will also feature gluten-free and vegan options—something rare to see on a menu focused on biscuits.

“We want to make sure we meet everybody’s dietary needs,” said Lee. “So we will have vegan and gluten-free biscuits and gravy too.”

Union Biscuit’s space at 8740 W Sunset Road is about 2,400 square feet and will seat 60-70 guests inside, along with a small outdoor patio. It’s expected to open in Q3 or Q4 of 2023.
