TIABI Coffee & Waffle to Open Spring Valley Location

TIABI stands for much more than just coffee and waffles. The name itself is an acronym for “To Inspire And Be Inspired.” The cafe was founded by two journalism majors who met while attending UNLV in 2007. By 2013, Tiffany Stiles and Mae Pineda’s friendship became a business partnership when they opened TIABI Coffee & Waffle near their alma mater.

More recently, the pair signed onto TIABI’s second chapter across town in Spanish Trails Center at 4950 S Rainbow Blvd. The restaurant’s Facebook page also points to a northward expansion to 6320 Simmons St., the space that Donut Mania recently occupied. 

With TIABI, Stiles and Pineda hope to inspire others. Stiles spoke with Las Vegas Woman Magazine about their brand:

“When making changes in our store and talking to customers, we find ourselves asking, ‘Will it inspire others?’” Stiles said. “Our waffles are our signature, 100% vegan recipe and our coffees are locally roasted from various roasters in the city.”

While the real estate firm Mountain West Nevada revealed TIABI’s latest developments on its own Facebook page, the coffee and waffle shop itself has yet to announce an opening date for its Spring Valley debut. What Now Las Vegas reached out to the brand for comment, but they have not made a statement at the time of publication.
